Falafel Inc. is an authentic, quick-service eatery that serves up Mediterranean delights such as falafel, hummus, bowls, and sides with fresh, locally sourced ingredients.  The tenant build-out design and permitting processes required complex coordination with the base building design team, engineers, code officials, and permit facilitator.  This retail presented spatial constraint challenges, compacting the necessary program in a small footprint, including, customer queuing, production, storage, and required equipment clearances.
